Attention people who like beets

Friend raved about these from Costco. Picked some up over the weekend and just tried them. They are delicious!!

They are vacuum sealed and are on a regular shelf, not refrigerated. Costco was selling a refrigerated product called Love Beets, but I haven't seen those in a while.

Just in time for cold borscht for the summer!

I got Love Beets at Costco a couple months ago, but they haven’t been there since. I’ll look for these!

Here’s a recipe for quinoa salad with roasted beets, chickpeas, oranges, spinach. Much quicker when you don’t have to roast the beets! I cook a cup a quinoa with 2 cups water, 20 minutes.

I like the gold beets. A nicer presentation I think, but precooked and peeled is a big plus.

Seriously though, I do really, really like them. I had them today with a bit of balsamic vinegar and crumbled feta cheese.
