    Was really surprised to see what I think of as a specialty cut, not often seen except at a butcher. Mr wtg's Mom would have been in seventh heaven.....she absolutely loved ox tail soup....

    Costco also had short ribs. I think they had both flanken and English cuts.

        Oxtail at $8/lb? They’re all bone. Offal. Soup bones. Fertilizer. Dog food stuff. I don’t get how they can get away with that.

        I bought standing rib roast at $6.99 last week. Ham at Aldi this week is $.78/lb. Finally found marrow bones at $6/lb at a throwback butcher out in corn country but even that is absurd

        I don’t get why anyone buys this stuff.

          Our Costco carries oxtails on a regular basis. Every once in a while, I need an oxtail stew! Or oxtail adobo. Yummmmmmm. And reasonably quick in the Instant Pot.

            Oxtails, like veal shanks, are considered somewhat of a delicacy. Do not ask me why. I used to buy veal shanks for $2 a pound. Then Osso Buco because popular. Now they're like $14. No way. Lamb shanks are cheaper and a LOT meatier.

              There was a great little market up in Door County with a wonderful selection of meats where years ago I used to buy veal and lamb shanks for maybe $4 a pound. I would make Osso Buco and also a Greek lamb shank recipe with orzo, but as @Mik says, the price of the meat just skyrocketed, and I kind of stopped buying it.

              All of these cuts - lamb and veal shanks and the ox tails - are deliciously rich. Glad that all the parts are getting used and not going to waste!
