Poblano peppers in abundance
-
With the temps cooling the crops are winding down....but the garden is still producing. I have two poblano pepper plants and there are tons and tons of peppers on them this year. Also two japalenos that are breaking under the weight of their crop.
Also pickles and green beans. Potatoes will get harvested in a few weeks.
Four of the poblanos went into this Chile Relleno Casserole:

There are lots of recipes for this type of casserole. Here's the one I used:
It puffs up nicely in the oven.
I didn't have any ground beef so I used some turkey Italian sausage. And of course the fresh poblanos, charred under the broiler and prepped as the recipe describes. Three whole peppers on the bottom of the baking dish and the fourth chopped and sprinkled on the top.
Have to find some more recipes with poblanos. And tomorrow I have to pick the jalapenos and give the Cowboy Candy recipe a try! Also another batch of refrigerator pickles.

I have never seen a chili rellano made in to a burrito.
Interesting idea.
