We sampled some high end balsamic vinegar when we visited Italy in 2018. It was bottled and aged by the Verrazano family - they have a bridge named after them.
They age their balsamic in casks for like 30 years or something What comes out is kind of a savory syrup. It didn’t taste like vinegar at all - no astringency.
I’m not sure what I’d ever use it for.

Yep, we once bought some balsamic (mid-priced, like in the $25-range) and it was awful. It even came highly recommended. But after that, we pretty much don’t buy it, even though there are some dishes we might use it with if we had some that we liked. (Of course Mr SK cooks mostly Asian style< which rarely calls for that)
But I’m not keen to experiment on much beyond maybe $5…

The Trader Joe's balsamic glaze is pretty good. Small bottle is maybe $4?
We buy the big bottles of Kirkland Signature balsamic vinegar at Costco. I use it on fresh mozzarella and tomatoes, in homemade salad dressings, and to perk up other dishes like grilled chicken breast. I love it.
