The jam is delicious.
I also made the gooseberry chutney. That needs to mellow out for about a month, so I just put the jars in the basement and we'll give it a try in August sometime. But based on the taste of it I had yesterday, I think next year I'll be doing all jam and will skip the chutney. It was pretty good, but the jam was fabulous...

Indian chutneys are whole bunch of different things, but when I use the term chutney, it's the Western version of an Indian condiment made with fruit. It's a savory jam/preserve made with fruit, vegetables, spices, sugar, and vinegar. A classic one is mango chutney. It's used as a condiment with meats or cheese.
The recipe I used had gooseberries as the main fruit instead of mango. Also onions, raisins, ginger, red chili flakes, sugar, mustard seeds, brown sugar, apple cider vinegar, and a bit of salt.
