Easy Saffron Seafood Stew

Been on my own all week with Sharon gone. Cooked a lot of new things with varying degrees of success.
But this stuff! Wow! Might be the best thing I’ve ever made. It’s my second attempt at the recipe and this time I purposely undercooked it a bit. The mirepoix still has a bit of snap and the seafood, difficult not to overcook, is perfect. The different textures remind me of a salad. I omitted the potatoes because they don’t freeze well.
Not a budget recipe. The saffron alone cost some $10, but frozen shrimp and fish fillets weren’t too bad.
