Haven't tried it, though it sounds promising. Of course I'm the "hope springs eternal" type.

Anyone cook their chicken this way?

Chicken a la French sear. I’ll try it!

Me too. I find that cooking by temperature works for me pretty well, plus I usually brine chicken first.

But I've bookmarked this, so I will try it, although it takes longer.

I tried the recipe and it lives up to the hype. The chicken breast was perfectly done, moist, and tender. Should also note that I had two very different size chicken breasts (Costco's packages are notorious for that) and I cooked them together and didn't adjust the time for size. They were both perfect.

While the chicken was resting on a plate I made a pan sauce. Reduced the liquid that was left (I had used chicken broth), added a bit of mustard and a tablespoon of butter. Lots of options to change this up, from what seasoning you use on the chicken initially to additions to the pan sauce at the end.

            A definite winner for me.

              Thanks
              Will try that.
