    Al Johnson's Swedish Restaurant is located in Sister Bay, WI, where we used to have a vacation home. Have to admit I miss having breakfast there, especially during the winter when there were only locals and no tourists.

    Al's is well known for its food and the ultimate touristy thing....the building has a grass roof and there are goats up there...

    I order strawberry, raspberry, and lingonberry preserves pretty regularly from their store. I was loading up my online shopping cart and stumbled upon a recipe for a Scandinavian almond cake. It's in the oven as I write. Will let you know how it turns out.

      I didn't do the powdered sugar, but here's what I got:

      As I checked a number of recipes for Scandinavian almond cake it seemed like the ratio of sugar to other ingredients was quite high. The end product was very tasty but a bit too sweet for me. Mr Sweet Tooth thought it was great. I slathered some raspberry jam on my slice of cake and it was perfect. The tart raspberries balanced the sweetness of of the cake. Lingonberries would be equally good.

      Super easy recipe. I think next time I’ll add some cardamom .
