A good recipe
-
I just made this again and thought I'd post the recipe. It's very easy, very tasty with no additives. Last time I checked the hummus containers in the grocery shop I couldn't find a single brand that didn't include some sort of gum stuff. Also, store bought has become quite expensive.
Hummus
15 oz can of checkpeas
1/4 cup lemon juice (I find that this is too much for my taste so I add a bit less than 1/4 cup)
1/4 cup tahini
1 small garlic (I have used a large garlic before but it really comes through in the flavor, adjust according to taste)
2 Tblsp olive oil
1/2 tsp cumin
salt to taste
2-3 Tblsp water
dash of paprikaBlitz the chickpease with the water until coarsely chopped in a food processor. Add everything else and process until desired consistency.
So easy, so good!

Good stuff, Bernard! I have done basically the same recipe using dried chickpeas. I’m sure there are many regional variants too. No question that making your own is superior to buying Sabra or some such.

Home made hummus is the boss. Storebought stuff always tastes bitter to me. The best I've found in store is Aldi's Park Street Deli, but still not as good as the fresh stuff Ali used to make in Boston at Pita Falafel.

I would make it at home, but our Costco carries a local restaurant's version that is excellent.
Bonus points, too. If you buy a container of the hummus at Costco and bring your Costco receipt into one of their restaurants, you get six of their fabulous falafel at no charge.
Pita Inn's hot sauce is delicious, too.
