For sourdough bakers

Don't know about anyone else, but sometimes I find myself swimming in sourdough starter. Been collecting non-bread recipes so I can use it up faster and not have to discard it because it's spent.
This one came to my inbox last week from Breadtopia. Pumpkin Biscotti with Sourdough Discard. Haven't tried it yet but it sounds promising.

This King Arthur recipe for sourdough pancakes or waffles is a mainstay here. We'll have fresh waffles for breakfast and then freeze the rest. They reheat beautifully in the oven or toaster.

I never discard. You can use it even when it’s spent and covered in the liquid hooch (I pour the hooch off because it makes things more sour). I bake with it less than once a week, and often it’s pizza dough (which is super easy, and freezes well though I think it’s slightly better used fresh). And I usually use more started than the recipes call for.

I also keep it in a huge container in the fridge, so it doesn’t matter if I have more some weeks than others (I just put more in whatever recipe I use). About 1:3 volume wise - starter to flour.

Sourdough waffles are delicious, we had them yesterday! the other day I ran out of tortillas and had leftover insides, I was proofing dough for pizza and grabbed a little piece off, flattened it super thing and put it in a hot cast iron pan with a little olive oil - omg - best Naan like wrap bread ever, worked great with the leftover burrito filling. Here’s my starter. His name is Fred.

I love it...I'll have to think of names for my starters. I keep two jars in the frig and stagger when I feed them so I'm always certain I have some pretty active cultures happening.
